Peach Cucumber Salad With Mint Vinaigrette
• 3 fresh peaches
• 2 medium cucumbers, halved and sliced
• 6 large fresh mint leaves, finely chopped
• 1 tablespoon apple cider vinegar
• Juice of one fresh lemon
• 1 tablespoon honey
• 2 tablespoons olive oil
• Crumbled goat cheese
• Salt & pepper
Slice the peaches and cucumbers into ¼ inch slices and place in a medium bowl. Whisk together the apple cider vinegar, lemon juice, honey, olive oil. Finely chop the fresh mint and add to the vinaigrette. Taste and season with salt and pepper if desired.
Pour over cut peaches and cucumbers and mix well. Cover and refrigerate for several hours.
Garnish with goat cheese.
