Breakfast Avocado Toast

Avocado toast is surprisingly divisive, but there’s no denying it has a great variety of nutrients perfect for starting your day! This simple recipe is super tasty and easy to modify.
½ small avocado
2 slices of bread (for tastiest results, use a wide loaf from a bakery, not prepackaged from the bread aisle)
1 large egg
Salt & pepper to taste
Paprika to taste
1 ounce goat cheese crumbles (or to taste)
- Mash avocado in a bowl, season with salt and pepper
- Heat a small nonstick skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook to your liking, seasoning with salt and pepper halfway through.
- While the egg is cooking, toast bread. Spread avocado over toasted bread, and season with paprika.
- Add goat cheese crumbles and when the egg is finished, place it gently on top of toast.
