Pumpkin Cookies

The leaves are changing and pumpkin spice items are filling the aisles of every grocery store. These delicious cookies are the perfect way to indulge in the pumpkin craze this time of year.

Pumpkin Cookies

Course Dessert

Equipment

  • Large Bowl
  • Baking Sheet

Ingredients
  

Cookie Ingredients

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 egg
  • 1 teaspoon vanilla
  • 7.5 ounces pumpkin
  • 2 cups flour

Icing Ingredients

  • ¼ cup butter slightly softened
  • 4 ounces cream cheese softened
  • 2 cups powdered sugar
  • ½ teaspoon vanilla

Instructions
 

Cookie Directions

  • In a large bowl, beat butter with an electric mixer until light and fluffy
  • Add granulated sugar, baking powder, baking soda, salt, nutmeg, and cinnamon and beat until combined
  • Add egg and vanilla
  • Beat in pumpkin
  • Add flour until combined
  • Drop dough onto baking sheet
  • Heat the oven to 350 degrees and bake for 10 - 12 minutes

Icing Directions

  • Mix all ingredients together and frost the cookies once they’ve cooled
  • Sprinkle cinnamon on top
