Spice up your dinner routine with this irresistible Jerk Pork Tenderloin, perfectly paired with a vibrant Pineapple Mango Kiwi Salsa for a tropical twist that’s as bold as it is refreshing.
Ingredients:

1 (2.5lb) pork tenderloin
JERK SPICE:
- ½ cup onion, finely chopped
- ⅓ cup scallion, finely chopped (4 to 6 scallions)
- ¼ cup fresh thyme leaves, chopped
- 4 garlic cloves, finely chopped
- 2 Tbsp fresh orange juice
- 2 Tbsp fresh lime juice
- 1-3 scotch bonnet peppers (or 1-3 habanero), seeded and minced depending on taste
- 1Tbsp fresh ginger, finely chopped
- 2 tsp ground coriander
- 2 tsp fresh ground black pepper
- 1 tsp allspice
- 1 dash cumin
- 1 tsp salt
- ½ tsp ground nutmeg
- ½ tsp ground cinnamon
SALSA
- 2 cup fresh pineapple, chopped
- 1 mango, chopped
- 1 kiwi, chopped
- ⅓ cup red onion, chopped
- ¼ cup fresh cilantro, chopped
- 1 Tbsp fresh ginger, finely chopped
- 1 Tbsp lime juice
- 1 Tbsp rum
- 1 Tbsp jalapenos, finely chopped
Instructions:
- Combine the Jerk Spice ingredients in a small bowl and mix to form a coarse paste (or just blend in food processor).
- Coat pork tenderloin and marinate at least 4 hours or overnight. The longer it marinates, the more flavorful it will be.
- Combine salsa ingredients in separate bowl, mix well, and let sit for a while to allow the flavors to mingle.
