Jerk Pork Tenderloin & Pineapple Mango Kiwi Salsa

Spice up your dinner routine with this irresistible Jerk Pork Tenderloin, perfectly paired with a vibrant Pineapple Mango Kiwi Salsa for a tropical twist that’s as bold as it is refreshing.

Ingredients:

  • 1 (2.5lb) pork tenderloin

JERK SPICE:

  • ½ cup onion, finely chopped
  • ⅓ cup scallion, finely chopped (4 to 6 scallions)
  • ¼ cup fresh thyme leaves, chopped
  • 4 garlic cloves, finely chopped
  • 2 Tbsp fresh orange juice
  • 2 Tbsp fresh lime juice
  • 1-3 scotch bonnet peppers (or 1-3 habanero), seeded and minced depending on taste
  • 1Tbsp fresh ginger, finely chopped
  • 2 tsp ground coriander
  • 2 tsp fresh ground black pepper
  • 1 tsp allspice
  • 1 dash cumin
  • 1 tsp salt
  • ½ tsp ground nutmeg
  • ½ tsp ground cinnamon

SALSA

  • 2 cup fresh pineapple, chopped
  • 1 mango, chopped
  • 1 kiwi, chopped
  • ⅓ cup red onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 Tbsp fresh ginger, finely chopped
  • 1 Tbsp lime juice
  • 1 Tbsp rum
  • 1 Tbsp jalapenos, finely chopped

Instructions:

  1. Combine the Jerk Spice ingredients in a small bowl and mix to form a coarse paste (or just blend in food processor).
  2. Coat pork tenderloin and marinate at least 4 hours or overnight. The longer it marinates, the more flavorful it will be.
  3. Combine salsa ingredients in separate bowl, mix well, and let sit for a while to allow the flavors to mingle.
