Lazy Weeknight Pesto Chicken

By Hayley Lardinais, Account Coordinator Tired after a long day of quarantine? Try this easy and low-maintenance meal that only requires 4 ingredients and little to no prep! Serve with a side of pasta or salad, and a glass of wine. You’ll Need: 3 Chicken Breasts Salt and Pepper to taste 4 Tablespoons Basil Pesto 1-2 Roma Tomatoes 1 Cup Mozzarella Cheese Red Pepper flakes to taste (optional) Directions
  1. Preheat oven to 400˚F.
  2. Place chicken breast in a baking dish. Season chicken with salt, pepper and red pepper flakes (if desired) to taste.
  3. Spread pesto on each chicken breast.
  4. Layer tomatoes on top of the chicken.
  5. Top with mozzarella cheese.
  6. Bake for 40 minutes.
