2 pounds ground turkey
½ pound thick-cut bacon, cut into ½ inch pieces
2 cloves garlic, minced
2 medium onions, chopped
2 bell peppers (any color), chopped
2 tablespoons chili powder
1 tablespoon each of chipotle chili powder, ground cumin, dried oregano, and smoked paprika
Salt and pepper
15 ounce can kidney beans
15 ounce can black beans
24 ounce can crushed tomatoes
24 ounce can diced tomatoes
1 cup beer
Shredded cheddar cheese, for garnish
Scallions, for garnish
Using a Dutch oven, cook the bacon over medium-high heat until crisp. Add chopped onions, bell peppers, and all spices and cook 3-4 minutes until softened. Add ground turkey and cook until no longer pink. Stir in the beer and both types of beans. Add crushed and diced tomatoes, turn heat to low and simmer for at least an hour. Use the shredded cheese and scallions for garnish.
