Yield: About 7 servings
Ingredients
1 1/2 cups dry orzo
Salt to taste
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
1 1/2 tablespoons extra virgin olive oil
2 teaspoons honey
5 cups cubed seedless watermelon (dice into 1/2 to 3/4-inch cubes)
6 ounces feta cheese, crumbled
1/4 cup chopped fresh basil
Directions
Cook pasta in salted water according to directions listed on the package. Drain well (don't rinse!) then pour into a large bowl.
While pasta boils, stir together lemon zest, lemon juice, olive oil and honey. Pour half of mixture over drained pasta in bowl and toss. Season with salt taste. Allow to cool.
Add watermelon, feta and basil to orzo, add remaining lemon juice mixture and toss to evenly coat.
