Ingredients:
-1 1/2 cups quinoa, rinsed
-1/2 cup loosely packed fresh cilantro
-1/4 cup freshly squeezed lime juice (about 2 limes)
-1/4 cup avocado oil
-1 teaspoon sea salt
-2 cups diced watermelon
-3/4 cup crumbled feta cheese
-1/2 English cucumber, seeded and diced
Cook quinoa according to package instructions. Let cool completely.
For the dressing, process the cilantro, lime juice, avocado oil and sea salt in a blender on low until thoroughly combined.
Combine cooled quinoa in a medium bowl with watermelon, feta, and cucumber. Add dressing and mix thoroughly. Season to taste with salt and pepper. Serve immediately or refrigerate and serve cold.
