Easy Grilled Chicken Kabobs

Easy Grilled Chicken Kabobs

  • ⅓ cup olive oil
  • ¼ cup cilantro (chopped)
  • juice from 1 lime
  • 2 garlic cloves (chopped)
  • 1 teaspoon kosher salt
  • ½ teaspoon cumin
  • ¼ teaspoon ground pepper
  • 1.5-2 pounds chicken thighs
  1. Whisk the first 7 marinade ingredients together in a bowl. Chop chicken into chunks and marinate in mixture either in bowl or Ziploc bag for 2-4 hours, or overnight.

  2. Remove from marinade and skewer onto kabob skewers. Grill over medium-high heat for 4-5 minutes per side or until done.
