Easy Celebration Salad

by Angie Ash, EVP This versatile salad is bursting with flavor and texture, and healthy yet tasty ingredients. It’s my favorite to whip together for gatherings with family or friends, which I’m hoping we can actually do this summer!

Easy Celebration Salad

For the Dressing

  • ¾ cup sugar
  • ½ cup apple cider vinegar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup extra virgin olive oil

For the Salad

  • 1 bunch of kale, fresh spinach, or other dark and leafy greens (stems removed and leaves chopped)
  • 1 shallot (thinly sliced)
  • 1 cup shredded carrots
  • ⅔ cup fresh blueberries
  • ½ cup dried low sugar cranberries
  • ½ cup any nut pieces (I used sliced almonds)
  • ½ cup unsalted roasted sunflower seeds
  • ½ to 1 cup your favorite shredded cheese (I used sharp cheddar)
  1. Make the dressing by whisking all ingredients together in a bowl until the sugar is dissolved. Set aside.

  2. Toss the greens, shallot, carrots, blueberries, dried cranberries, nuts, sunflower seeds, and cheese in a large bowl.

  3. Pour half of the dressing over the salad and toss again.

  4. Cover the bowl with plastic wrap and refrigerate until ready to serve.

  5. Re-whisk remaining dressing and serve on the side.
