Easy Celebration Salad
For the Dressing
- ¾ cup sugar
- ½ cup apple cider vinegar
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup extra virgin olive oil
For the Salad
- 1 bunch of kale, fresh spinach, or other dark and leafy greens (stems removed and leaves chopped)
- 1 shallot (thinly sliced)
- 1 cup shredded carrots
- ⅔ cup fresh blueberries
- ½ cup dried low sugar cranberries
- ½ cup any nut pieces (I used sliced almonds)
- ½ cup unsalted roasted sunflower seeds
- ½ to 1 cup your favorite shredded cheese (I used sharp cheddar)
Make the dressing by whisking all ingredients together in a bowl until the sugar is dissolved. Set aside.
Toss the greens, shallot, carrots, blueberries, dried cranberries, nuts, sunflower seeds, and cheese in a large bowl.
Pour half of the dressing over the salad and toss again.
Cover the bowl with plastic wrap and refrigerate until ready to serve.
Re-whisk remaining dressing and serve on the side.
