Ham and Cheese Cucumber Sandwich

Keeping meals light in the summer is always a plus. Our family loves to find simple and quick summertime snacks that are easy to prepare for our summer activities…boating, camping or hanging out in the backyard.
These cuke sandwiches can be rolled by cutting the slices long or if you prefer stackable handhelds, then slice the cucumbers as standard disc slices.. Either way – their ham and cream cheese toppings have all the flavor of your favorite deli sub but way fewer calories.
These can be prepared with any of your favorite sandwich ingredients!
Instructions
- Thinly slice the cucumber lengthwise to make five sheets of cucumber.
- Cover one side with cream cheese.
- Fold deli meat longways and put on top of cream cheese. Roll up and hold together with toothpicks.
- Assemble and enjoy!
