Lazy Weeknight Pesto Chicken

Tired after a long day of quarantine? Try this easy and low-maintenance meal that only requires 4 ingredients and little to no prep! Serve with a side of pasta or salad, and a glass of wine.
3 Chicken Breasts
Salt and Pepper to taste
4 Tablespoons Basil Pesto
1-2 Roma Tomatoes
1 Cup Mozzarella Cheese
Red Pepper flakes to taste (optional)
- Preheat oven to 400˚F.
- Place chicken breast in a baking dish. Season chicken with salt, pepper and red pepper flakes (if desired) to taste.
- Spread pesto on each chicken breast.
- Layer tomatoes on top of the chicken.
- Top with mozzarella cheese.
- Bake for 40 minutes.
