Bacon Marmalade

  • 1 pound Bacon
  • 1 White Onion
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Apple Cider Vinegar
  • 2 tablespoons Whole Grain Mustard
  • Fresh Cracked Pepper

Cut the bacon into small strips and finely mince the onions. Cook the bacon in a large sauté pan on high heat until crispy and perfectly browned. Use a slotted spoon to remove the bacon and set aside. Drain all of the bacon fat from the pan except for about a ¼ cup. Add the onions and cook on medium heat until tender and caramelized. Add the brown sugar until dissolved, and then add the apple cider vinegar and mustard. Cook until the vinegar has started to evaporate, and then season with black pepper and add the bacon back in to the mixture. Stir together and remove from heat. Let cook and then transfer to an airtight container.

This is perfect on burgers and sandwiches. My family – bacon lovers that they are – eat it with goat cheese on crackers for movie-night snacks.
