No-Bake Energy Bites

Between new resolutions, goals, back to school and back to work, the new year can be very busy! These super simple no-bake energy bites are a perfect snack to take with you on the go.
Ingredients:
1 cup oatmeal (old-fashioned oats, uncooked)
⅔ cup toasted coconut flakes
½ cup peanut butter
½ cup ground flax seeds
½ cup semisweet chocolate chips
⅓ cup honey
1 tablespoon chia seeds
1 teaspoon vanilla extract
Directions:
- Add all ingredients to a medium bowl and stir until well combined.
- Cover and let chill in the refrigerator for 20-30 minutes.
- Roll into 1” balls and store in an airtight container in the refrigerator.
Once you have the recipe down, the ingredients can be switched up for different flavors each time! Try butterscotch chips instead of chocolate, add cinnamon or dried cranberries, or mix in chopped peanuts for a little crunch.
